Mushroom is a very well known name for every one but those who are gourmet or biologist they know about its quality. Its taste fascinate every one but do you know its use not only making cuisine but also as a medicine. It’s known as fungi also, fungi are incapable of photosynthesis. Some mushroom derives food from plants to which they attach them selves. Some mushroom is so beneficial while other is toxic, even deadly. So before use make sure about its quality. Day by day it’s straddle in food industry because of its lip-smacking taste. Now a day people are using it as a substitute of nonvege or paneer. That’s Why mushroom industry are growing day by day now government is also making A plane enhance it. Those who are attach with it they are getting profit. Mushroom has lots of species. 1-Pleurotus oyster fleshy, mild sea food odour named for shape and taste. 2- Canary/yellow oyster similar to the pleurotus oyster. 3- Mushroom fairy ring delicate texture with an earthly woodsy taste. 4-Hen-of-the-woods. 5- Enoki faintly. 6- Shiltake full bodied steak like flavor. 7- Cope porcini. 8- Yellow foot. 9- Black trumpet. 10- Chanterelle. SOME MUSHROOM ARE USED AS MEDICIAN AS. 1-Reishi may help the body defend itself against cancer. 2-Tree (wood) ear blood thinning properties may prevent heart disease. 3-Maitake touted for immune enhancing potential. But never eat a raw mushroom because cell walls of mushrooms are indigestible & raw mushroom compounds that contain inactivate digestive enzymes and before use see that it is fresh and springy with no dark area. After cooking its taste become delicious. We can use it with rice chapatti and pasta beautifully amplify and extended the delicate flavors of mushroom.

HEALTHY GRAM SALAD


INGREDIENTS: 2 tbs thick curd, 1cup mix gram , 1tsp chat masala, ½ tsp cardamom powder, ½ tsp black pepper powder, red chilly, rock salt, salt to taste.
METHOD: 1-Take a bowl add mix gram, curd, chat masala, ½ tsp cardamom powder, ½ tsp rock salt, black pepper, red chilly powder, salt and toss everything.
2-Now squeeze lemon and serve.

INGREDIANT 1kg sewai, 1/2kg khoya, 1cup dry mixed fruits, sugar, water, ghee for deep fry.


METHOD 1-Take the kadahi now deep fry sewai till it turn golden brown.


2-Now heat the water mix sugar now make chasani.


3-Mix sewai now cook till it done well.


4-Mix khoya, dry fruits and cook more 5minutes.


5-Now serve with LOVE.

HOW TO COOK RAMZAN SPECIAL FRUITS SEWAI


Cooking time: 30minuts
Ingredients: 100gm sewai, 1lit milk, milk made, cardamam 2, safron 2mg, mix fruits (orange, grapes, apple, banana) or any seasonal fruit, sugar according to your taste, coconut, assorted dry fruit(almond pistachio, cashewnut), 1 table spoon ghee.
Method: 1- Heat ghee in to kadai now add cardmom & sewai fry till 10 min.
2-Pour the milk on it add milk made, safron, coconut, cook till 10 minuits.
3-Mix all the crush fruits and cook tiil ten minuts.
4-Garnish with dry fruits & serve.

HOW TO MAKE CHATPATA DAHI BADA



INGREDIENTS: 1 Bowl soya beens, 1/2 bowl yellow gram, 25gm cashewnut, 25 gm currant, green coriander, chily ginger(pealed & greated), rosted cumin seed powder, asafoetida, curd, chat masala, rock salt oil.


METHOD:1-Soak both puls into water till 6-hour.


2-Now grind both gram and mix 2pinch asoefatida.


3-Mix green coriander, chilly, ginger, salt.


4-Mix all mixture till it becom fluffy. 5-Now add cashewnut & current & make a roll. 6-


take a kadai & heat oil in it now fry the roll in dark brown.


7-Take curd mix 1tbs rock salt cumin seed powder.


8-Dip the roll into curd sprink chat masala & serve.

HOW TO MAKE FRESH CHEESE NOODLES


INGREDIENTS: 200fresh egg noodles, 100ml mustard oil for deep frying, 2tbs vegitable oil, 2 garlic flack, 1/2 cup cheese, 1/2 cup green fresh pea, 2 spring onion, chopped into 1 inch length, 2tbs soya sauce, 1/2 tsp white papper, 1/4 cup coriender leave, 1/4 mustared seed, 1/2 tbs corn flour mixed with water to make thin past, salt.

METHOD:1-Deep fry the noodles into mustard oil.

2-Remove from the oil and drain. place the noodles in a serving dish and set aside.

3-Heat oil into a kadhi add musterd seed and garlic fry untill golden brown.

4-Add cheese, pea & fry for 5 minutes.

5-Add the soya sauces, white paper stir for a couple of a minutes on a high flame. finally, stir in the corn flour paste cook for 2 minutes.

5-Pour the vegetable over the noodles in the dish garnish with coriender leaves and serve.

HOW TO MAKE LOW FAT CHEESE ONION PARATHA


INGREDIENTS: 250gm paneer(greated), 2 onion, green chilly, green corinder, chat masala, garam masala, aniseed, oil, flour, 1-lemon, salt.

METHOD:1-Knead the flour & make a soft dough. 2-Take a pan & heat 1tbs oil now add onion, aniseed, paneer.

3-Cook till 5-minutes now add chat masala garam masala, green coriender, green chilly & squeeze a lemon.

4-Cut the dough into small pices & kneaded flour into flat round cake.

5-Stuff all mixture into cake & make paratha.

6- bake with oil & serve it.
